Recipe ! #2: Cinnamon Roll with Caramelized Apple Jam and Walnut

The first time had a successful bread-baking :D The recipe was adapted from here.

Ingredients

  • 2 1/2 cup bread flour (I used all purpose flour instead, still got good result. Read the difference between them here)
  • 2 tsp dry yeast
  • 4 tbsp sugar
  • 3 tbsp + 1 1/2 tbsp unsalted butter, melted (some experts told me that melted the butter for bread baking is a must. But I forgot to melt the butter and I got no problems hehe)
  • 1/2 tsp salt
  • 1/2 cup tangzhong (what is it?)
  • 1 egg
  • 1/2 cup milk
  • 3/4 cup caramelized apple jam
  • 1 cup walnut, crushed
Caramelized apple jam recipe:
  • 4 big apples, peel and chop into small pieces
  • 2 tbsp cinnamon powder
  • 3 tbsp butter
  • 1/2 tsp nutmeg powder
  • 1 tbsp vanilla powder
  • 5 clove
  • 1 1/2 cup + 1 cup brown sugar
  1. Melt butter, add 1 1/2 cup brown sugar, stir until sugar form some creamy golden caramel mixture
  2. Add chopped apple, stir until apple turn slightly golden brown, remove from heat
  3. Blend the apple mixture 'til smooth
  4. Put mixture back to heat, add cloves, vanilla, cinnamon powder, nutmeg powder, stir continuously until all the apple juice and liquids gone and mixture get sticky (I took about 3 hours stirring, by the way) 
Direction:
1. Make the tangzhong first! Whisked 1/2 c water together with 1/6 cup bread flour in a small saucepan and heated gently until mixture thickens. Remove from heat and let it cool.
2. In a large bowl, add tangzhong, 3 tbsp melted butter, sugar, salt, egg, and milk. (Egg and milk should be beaten together first)
3. Add the bread flour, make a lower surface in the center, add the yeast.
4. Knead the dough for 20 minutes, then cover dough with warm damp cloth for one hour. Allow the dough to rise double.
5. Punch down, roll the dough on a lightly flour surface into a 30x45cm rectangle. Brush melted butter over the dough. 

6. Spread apple jam, add crushed walnuts and sprinkle cinnamon powder. Then roll the long edge up.



7. Cut the roll into 16 pieces, and place them into two greased 9 inch pie pan.
8. Allow to rise for 2.5 hours, covered with plastic wrap. Preheat the oven 175 C. After 2.5 hours and all the rolls sides are touching each other, brush the top with egg wash (1 egg + 4 tbsp milk or water) and sprinkle cinnamon powder.


9. Bake for 15-20 minutes.
